Did you know coffee begins to start losing some of its flavor and aromatics as soon as it is ground? Grinding your coffee beans fresh is one of the best ways to brew a more flavorful cup of coffee.

If you like to have the flexibility of grinding for different brewing devices or wish to get the most flavor out of your coffee, you may want to consider grinding your coffee before brewing.

Blade vs. Burr Grinder

Blade grinders heat the coffee as they operate due to friction. Many blade grinders have a button that must be held down to grind; depending on who is grinding the coffee, it is harder to achieve a consistent grind on a blade grinder.

Burr grinders have two revolving abrasive surfaces (“burrs”). Burr grinders slice through coffee beans more consistently which is best for brewing flavorful coffee.

Why we Like Burr Grinders

Burr grinders help you brew coffee-shop quality coffee at your home or office. The Red Cedar Coffee Co. Tasting Room features a couple burr grinder models.

The Encore and Virtuoso+ grinders are manufactured by Baratza which has one of the best warranties on the market. Baratza’s grinders have been designed for longevity. Both models have a storage hopper that can hold about half a pound of coffee.

The Encore is a great entry level burr grinder.

  • The Encore is lighter and has a small footprint.

The Virtuoso+ grinds coffee faster compared to the Encore.

  • Features a 60-second timed grind switch which is helpful when storing coffee beans in the hopper.
  • There is an LED back-light for the ground coffee bin so you know how much coffee you are grinding.

Hand Coffee Grinders

If you have the need to travel with your coffee grinder, or just prefer a manual model, our Tasting Room offers the Hario Ceramic Coffee Mill Skerton Plus. This grinder comes with a lid that can be used to store ground coffee. This model features a durable ceramic burr and the anti-slip cover helps ensure stable coffee grinding.

Keep your burr grinder in tip-top-shape!

Oils accumulate over time and using the Full Circle grinder cleaning tablet can help you get the most life out of your coffee grinder. If you are grinding dark roast coffees or flavored coffees, you will want to clean your grinder on a more frequent basis.

The grinder tablets have been formulated specifically to remove the coffee oils and residue on the grinder’s burrs and can also prevent jamming of the grinder.

It is said that absence makes the heart grow fonder. Yes, we would agree. And so we are happy for the return of Ethiopian Harrar.

This is a truly unique coffee and there isn’t another region quite like Harrar.

Grown near the town of Harrar in the Eastern Highlands of Ethiopia this is a natural (sometimes referred to as dry) processed coffee. And it is in the processing of the coffee where part of the magic happens. Because the fruit of the coffee cherry remains on the bean post-harvest the coffee bean continues to develop its flavors. As a result, the Ethiopian Harrar has intense fruity characteristics which we describe as wine-like.

Hints of blueberry are first noticed in the fragrance of the ground coffee, and then the aroma of the brewed coffee. In the cup there are notes of mocha and berry.

Ethiopian Harrar is available in the Tasting Room and for Mail Order while quantities last.

The French press brews a full-bodied cup of coffee coffee. If you’re looking to pick up more of the characteristics that make your coffee unique, this is your brew method!

The French press is an immersion brewing method, meaning that the coffee grounds are steeped in hot water before being pressed to the bottom by a metal filter.

You will want to use a coarse grind for brewing your French press coffee. Pour the amount of coffee you’d like into the press then add hot water. Place the lid on top of the French press with the metal filter up. Wait 4-6 minutes and press the metal filter down. Pour and enjoy!

The term single origin means coffee that has been sourced from a farm, cooperative, coffee variety, or region. This differs from a blend which is a coffee made up of several single origin coffees.

In short, we enjoy single origins because they showcase the flavors of a particular place.

What creates the unique flavors of single origin coffees? To borrow a term from the wine industry, it’s terroir—climate, soil, elevation—all contribute to the distinct flavor of your favorite coffee origin.

Soil: Was the coffee grown in volcanic soil? It can impart a smoky taste in the coffee’s finish.

Elevation: the higher the elevation the more likely you will find elegant flavors like citrus or floral notes.

Process: Washed coffees typically have a “cleaner” finish. Dry process coffee will have earthier and berry notes. Honey process, depending on how much fruit has been removed, can have a smooth finish (“white honey”) or may be full-bodied and complex (“black honey”).

Finally, single origins represent a harvest. That is why during certain times of the year we may be waiting for the new coffee harvest to arrive at our roastery.

In the Red Cedar Coffee Co. Tasting Room our single origin coffees are represented by either a gold or green band across the front label. Examples of our single origin coffees include Organic Guatemala Huehuetenango, Costa Rica La Lia Finca Dragon and Ethiopian Sidamo.

Coffee Bundle Gift Set

We have recently been fielding questions on cold brew technique at the Red Cedar Coffee Co. Tasting Room in Berea, Ohio. As we head into the warm summer months it is not hard to think about cool summertime beverages. Cold brew coffee is one of those options.

While cold brew tends to be most popular during the summer, increasingly it is being served year-round in cafes and restaurants. The Toddy Cold Brew System brews a coffee concentrate using cold or room temperature water. When you are ready to drink cold brew coffee simply add 3 parts of water milk or soy (cool or steaming) to 1 part coffee.

Why we like the Toddy Cold Brew System

One benefit to cold brew coffee is the longer brew time (using cooler water) removes much of the acidity naturally found in coffee (50-67% less acidity compared to drip coffee makers according to Toddy).

Another benefit is that the Toddy Cold Brew system is easy to brew and clean. The coffee concentrate stays fresh up to 2 weeks in the refrigerator.

What comes with the Toddy Cold Brew System

The system comes with a brewing container, glass decanter, lid, Toddy filters (2) and a rubber stopper. The Toddy Cold Brew system is BPA free.

Red Cedar Coffee Co. sells the Toddy Cold Brew System, replacement stoppers, filters and filter bags.

Brewing Steps:

  1. Pour coarsely ground coffee and cold water into the brewing container.
  2. Steep for 12-24 hours.
  3. Filter the coffee concentrate into the glass decanter. Stays fresh for up to 2 weeks.

Cold Brew Coffee Recommendations

While any coffee may be used to brew cold brew coffee, we have a couple recommendations. If you prefer fruitier coffees try our Kenya AA or Ethiopian Sidamo. For chocolaty notes try our Fair Trade Certified Organic Colombian.

Thai Iced Coffee*

Ingredients

4 oz. Toddy® Cold Brewed Coffee

1/4 tsp. Cardamom

2 oz. Half and Half

Ice

Directions

Stir all ingredients, except the ice, together in a 16 oz. cup until well combined. Fill with ice.

Orange Truffle*

Ingredients

3 oz. Toddy® Cold Brewed Coffee (Use coffee beans with chocolate notes)

1 oz. Chocolate Syrup

1 oz. Caramel Syrup

1 oz. Orange Juice

6 Ice Cubes

2 oz. Cold Milk

Directions

Stir together ingredients (except milk and ice). Pour into tall glass over ice, add milk and serve.

Café Français*

Ingredients

1/4 cup Heavy Cream, Chilled

1 tbs. Confectioners’ Sugar

1/4 tsp. Vanilla

3/4 cup Toddy® Cold Brewed Coffee

1/4 cup Steaming Hot Water

Directions

Beat cream until rich and fluffy, with soft peaks. Mix in sugar, and continue to beat until stiff peaks. Add whipped cream to mug. Mix Toddy® coffee concentrate with water and steam. Add vanilla and pour over cream. Serve right away, and do not stir.

Since we started roasting coffee in 2005 we have been working to roast the best tasting coffee for our caffeinated and decaffeinated coffee drinkers.

With that goal, we roast Swiss Water Process decaf which is the only 100% chemical free decaf coffee. If you look at one of our Red Cedar Coffee Co. retail coffee bags you will see the Swiss Water Process logo placed prominently on the front label.

There are many ways to decaffeinate a coffee bean. However, the process that Swiss Water Process uses sets their coffee process apart. The Swiss Water Process method removes caffeine from the coffee bean using water, while protecting the unique characteristics (sometimes referred to as the origin or taste) of the coffee.

The decaffeination process begins by soaking the unroasted (green) coffee beans in hot water which in turns releases the caffeine. Once the caffeine has migrated from the bean and into the water, the caffeine rich water is moved into a new tank. Within this new tank the caffeine rich water will slowly flow through a carbon filter which traps the caffeine molecules and allows the soluble components to flow through the carbon filter. The unroasted coffee bean’s flavors and oils and then reabsorbed into the unroasted coffee bean which keeps the flavor intact. This process takes 8-10 hours and in the end the unroasted coffee is 99.9% caffeine free.

We understand that decaf coffee should be as special as its regular caffeinated counterpart. Therefore, we only trust Swiss Water Process with our decaf coffees.
